Seems best to define an aspect with the properties you require which can then be applied to your documents.

See http://wiki.alfresco.com/wiki/Data_Dictionary_Guide for defining an aspect.

You can use rules to auto-apply the aspect to any documents in your folder hierarchy.

The Web Client may be customised to display/edit those properties and search on those properties.
