This was a bad idea, because changing a variable with runtimeservice.setVariables(executionId, map) do a delete and insert of a new variable with the same name:

I changed the foreign key of my new table for additional parameters of variables to execution-id and name instead of id and everything works fine without exposing the variableInstances.
