You cannot do this with Alfresco Share out-of-the-box. But, this is one of the features of <a href="http://www.alfresco.com/products/workdesk">Alfresco Workdesk</a> so you might want to take a look at that.

You could also implement this with your own custom application that utilizes the Alfresco API to make queries and produce a folder tree.
