Hi,
<strong>Hide Start Workflow Button:</strong>
You can write custom evaluator on the Share and you hide the start workflow button from the document library. For example, the manage-aspects kind of button will be available to the Site Manager and not for the other users. You can follow the similar approach. The details are present in share-documentlibrary-config.xml file.

<strong>Hide Shared File:</strong>
I believe you can follow "Aikau" way to hide the button. I have not tried this option (http://docs.alfresco.com/5.0/tasks/dev-extensions-share-tutorials-custom-header-menu-item-removal.html).
