You can show blog posts from different sites on one dashlet. Just create a webscript which browser though all the sites blog and use that webscript to show those blogs on dashlet.
For using alfresco for your organization may be you could use site per project approach.That will be really easy to manage.

Then I'm starting to study how to create this kind of dashlet. Have you got some examples similar to what i'm looking for ? Is it possible to list all the blog post with a specific tag, so that i can choose which one should be listed on the main dashboard.
