First you need to do analysis on how and if your content models will be migrated, that applies to any system migration not just alfresco.

You either need to use an ETL tool or use one of Alfresco's many APIs to extract data from alfresco, transform it and load it into your new System.

Alfresco has lots of APIs available for accessing content and metadata.

It could be as simple as just ftping content from one repo to another, or it could be a major undertaking as models are transformed, along with version history and security.
