you mean to say that you are able to sent mail for other Recent Activities but not on site invite?

yes, exactly.I changed the configuration-file as stated in my post above. Then I invited users(existing ones and new ones) to my site and nothing was sent out. Then(maybe 30 minutes) after nothing happened I restarted tomcat … and then I received an Email about recent acitivities. So somehow the configuration is working, but not for invitations.
Any ideas where to look at see if an email was sent out? Any additional logs I can check? What should be the default behaviour? Is an email sent out directly after I invite someone usually?

Yes, Invitation mail should be sent immediately after invite. You mail setup is correct as you are able sent mail of recent activity.
User to whom you are inviting should have proper email Id set in his profile you need to check that as well.Also there should be some logs related to that in the alfresco log files check out those.
