Quick thoughts:

* The documentation you linked to is for 3.4. The more recent documentation is more complete. Find it at:
http://docs.alfresco.com
* As you begin to exhaust your disk space, you will want to schedule jobs to clean up deleted content and prune old versions of content. Look at the documentation on the content store cleaner for details.
* The Day Zero Configuration Guide is the best advice on preparing your system for production use:
