The challenge is that the simple workflow only does a move and nothing else–it can't do a move and set a property at the same time. If the requirement is to set this up only using folders and simple workflows, perhaps what you need is an "approved in flight" folder which has a rule that simply sets a status field and then moves the doc into the final approved folder.
