In my understanding it should be possible to have the live web site located in a different alfresco repository than the editorial one.I'm looking for some documentation on how to configure web quick start to obtain this (I suppose that I have at least to specify where the target site is located) but

Yes, this isn't as straightforward as I'd like it to be at the moment. There is another topic on this forum that discusses this.
