BTW, I just discovered another issue with community edition that I've installed using installation bundle with separate PostgreSQL 9.2 server. the problem is in editing Microsoft words doc and docx documents online!, also, I wasn't able to edit any image online!, the PDF editing is not working either!, I think that there is a problem with Image Magic?

Start with the installer until you are familiar with alfresco.    Read the documentation.

2- Will I be able to edit PDF files online directly from Alfresco?, if yes, what module should I install to enable this feature?
Sorry don't know the answer.

3- All documents of types doc, image, and PDF will be signable, that means that some one should be able to sign and email as attachments all these types of documents, how to do that in Alfresco?.
A document within alfresco already has security.   You need to explore and clarify your requirements.

4- Can I access my Alfresco documents structrue using Windows folder explorer?, how to do that ?
Either use CIFS or WebDav

5- How to send a document as an email from ALfresco?
Use the email action.

6- Will I be able to archive documents in Alfresco?, how to to that.
Alfresco is an "archive"   what do you mean by archive (Its a term that means many different things)

Is it better to stick with Alfresco installed by the installation bundle when using it in production or to install manually, I didn't find any good documentation on how to install it manually with existing tomcat and PostgresSQL servers!. please give me a clear answer brother.

I mean, I need to be able to sign the docs with some handwritten signature in forms of jpeg photo, that means I should be able to edit any doc online from Alfresco and adding my handwritten signature, can I do that ?
