I'll updated this just in case anyone runs into this issue themselves.

We had to apply a registry key to force Office 2010 use basic (unencrypted) authentication. Create a key called "BasicAuthLevel" DWORD = 2 (hex) in HKEY_CURRENT_USER\Software\Microsoft\Office\14.0\Common\Internet
