Is there a way to add a second content store to an existing installation?

For example, I have an older Alfresco 2.1.1 server with content and a new Alfresco Enterprise 3.2R server with no content. I am wanting to import the content from the older server into the new server as an "Archived" site so the old content will be online and available without having to go to the old server for the old content and keep both servers online.

This would also allow us to create new sites on the new server and re-organize the old content into the new sites.

Thanks,
Matt

You can do this with an Alfresco Content Package, acp.
http://wiki.alfresco.com/wiki/Export_and_Import
But this is only supported between the same versions of Alfresco, so you would first have to upgrade your 2.1.1 install to 3.2R. Since there is no content in your new 3.2R, why dont you scrap that repo instance, and upgrade the 2.1.1 there instead? Read about upgrades here http://wiki.alfresco.com/wiki/General_Upgrade_Process.
