We are attempting to use the out-of-the box Web Site Submission workflow.When we configure the workflow and choose Type of Review: Parallel, we would like for just ONE of the reviewers to approve instead of ALL the approvers to approve the task.Is there a way to accomplish this? Yes you could alter an existing workflow but its probably better to make a new copy and then modify the copy.
Then you can choose whether to have a parallel or singular approval.

You need to implement what is called a "pooled actor" for the one approver from a group functionaility.
