Do you mean how does it work? Or do you mean what happens when you change that status?

If it is the former, there are several posts in the forums that discuss workflow metadata configuration and capture. Here's one: http://forums.alfresco.com/en/viewtopic.php?f=34&t=19919

If you mean what happens when you change it, nothing as far as I can tell. I think it is only useful when you have a user that has many tasks and they want to be able to keep track of their to-do's. Or, I suppose if you were reporting on tasks you could sort them by status or something. But you can complete a task without changing that status, so it really doesn't affect the workflow in any way that I can see.

Jeff
